How to Use Raw Mango Powder in the Kitchen
Raw mango powder (also known as dry mango powder or amchur) is not only a flavorful ingredient but also offers several health benefits.
It adds a tangy, citrus-like flavour to dishes, enhancing their taste with the signature sourness of unripe mangoes.
In addition to its culinary uses, raw mango powder is valued in traditional home remedies for supporting digestion, heart health and relieving stomach-related issues. Some also believe it may have benefits in preventing certain types of cancers.

Recipes:
Dry Raw Mango & Dates Dip (Chutney):
Ingredients: |
Dry raw mango powder (or fresh raw mango) |

Coriander powder |
1 t.spoon |
Cumin powder |
1 t.spoon |
Salt |
As per taste |
Coriander leaves |
2-3 t.spoon |
Chilli powder |
½ t.spoon |
Pomegranate seeds |
2-3 t.spoon |
Recipe: |
Soak the dates in 1 cup of water and boil for 10-15 minutes. Once softened, grind them into a paste in a blender. (If using fresh raw mango, pressure cook it for 2-3 whistles, then blend with the dates.) |
In a bowl, combine the date paste with raw mango powder, salt, chilli powder, cumin powder, and coriander powder. Mix thoroughly and adjust the consistency to your preference. |
Garnish with coriander leaves and pomegranate seeds. |
Serve at room temperature. This chutney pairs well with chapati rolls, paratha, puri, or fritters. |
This chutney is also a great appetizer, aids digestion, and is a tempting treat for kids. |
Dry Raw Mango-Mint Appetizer:
Ingredients: |
Fresh raw mango chopped |
1 cup |
Mint leaves |
1 cup |
Salt |
1 t.spoon |
Coriander leaves |
1 cup |
Pepper powder |
½ t.spoon |
Ajwain seeds powder |
1 t.spoon |
Dry ginger powder |
1 t.spoon |
Recipe: |
Wash and dry the finely chopped raw mango. Spread it on a large plate and sundry for 8-9 days. |
Similarly, wash and sundry the coriander and mint leaves for 5-6 days. |
Take coriander leaves, mint leaves, and sundry for 5-6 days. |
Once dried, grind the raw mango pieces into a powder, and blend it with the dried mint and coriander leaves. |
Add salt, ginger powder, pepper powder, and ajwain seed powder to the mixture, and mix thoroughly. |
This flavorful powder can be sprinkled over salads, chaats, or buttermilk. |
This appetizer helps in digestion and can also stimulate appetite. |
Dry Mango Spiced Lotus Stem:
Ingredients: |
Dry mango powder |
3 t.spoons |
Lotus stem chopped |
1 cup |
Salt |
as per taste |
Mint leaves |
½ cup |
Ginger |
1-inch piece |
Green chilli |

Coriander leaves |
½ cup |
Peanuts |
2 t.spoon |
Recipe: |
Peel and chop the lotus stem into round semi-thick slices. Pressure cook them for 4-5 whistles, or until fully cooked. Strain out the excess water. |
Place the cooked lotus stem slices in a large bowl. |
In a blender, add all the ingredients except the lotus stem and grind them into a smooth paste, adding water if necessary. |
Coat the cooked lotus stem slices with the prepared paste, ensuring they are well-mixed. |
Serve the spiced lotus stem as a whole, with rice, or as a side dish. |
This dish makes for a satisfying and healthy evening snack, and it can also be served as a fun appetizer at children's parties. |
