How to Use Horse Gram (Kulthi) in the Kitchen

  • Horse gram, also known as Kulthi dal, is a powerful superfood widely used in traditional Indian cooking. It is known for its remarkable kidney detox and urinary health benefits.

  • Horse Gram has been a part of Indian diets for centuries.

  • Due to its heating nature, excessive consumption may lead to indigestion or heartburn. It's best to consume it in moderation, keeping your body type (prakriti) in mind.

  • Rich in essential amino acids, plant-based proteins, and vital minerals, horse gram supports overall wellness.



  • Recipes:

    Healthy Horse Gram (Kulthi) Puran Poli:

    Ingredients:
    Horse gram splits (kulthi dal) ½ cup
    Whole wheat flour 1 cup
    Fennel seeds ¼ cup
    Jaggery ½ cup
    Ghee 4 teaspoons
    Recipe:
  • Soak the horse gram splits in water for 6-7 hours. Drain and grind into a coarse paste using a mixer, do not add water.
  • Heat ghee in a heavy-bottomed pan. Add the horse gram paste and roast on medium heat until it turns light brown and aromatic.
  • Stir in fennel seeds and jaggery. Cook the mixture until it thickens into a dough-like consistency. Keep stirring to avoid burning.
  • Let the mixture cool slightly, then shape into lemon-sized balls for filling.
  • In a mixing bowl, knead wheat flour with water to form a soft dough. Add a little oil and knead again for smoothness.
  • Heat a griddle (tawa) on medium flame.
  • Roll out a small portion of dough, place the horse gram filling in the centre, seal it, and gently roll again into a semi-thick chapati.
  • Roast on the griddle, flipping both sides until golden. Apply ghee on both sides and serve hot.
  • This high-protein Puran Poli is perfect for kids and makes a healthy breakfast or light dinner option. Enjoy it with a dollop of ghee or a side of warm milk.


  • Nutrient-Rich Horse Gram Soup (Kulthi Soup):

    Ingredients:
    Horse gram (Kulthi) ½ cup
    Long pepper (Pippali) 1 t.spoon
    Water 3-4 cups
    Ghee 2 t.spoon
    Curry leaves 1 t.spoon
    Asafoetida (Hing) a Pinch
    Cumin seeds ½ t.spoon
    Salt as per taste
    Lemon juice 1 t.spoon
    Coriander leaves 2 t.spoon (chopped)
    Recipe:
  • Roast the horse gram in 1 tsp of ghee in a heavy-bottomed pan for 4-5 minutes. Let it cool completely.
  • Grind the roasted horse gram into a fine powder using a mixer or flour mill.
  • Heat ½ tsp of ghee in a pot. Add cumin seeds and a pinch of asafoetida.
  • Add curry leaves and powdered long pepper. Stir gently.
  • Add the horse gram powder, salt, and 2 cups of water. Mix well.
  • Boil the soup on a medium flame for 10-15 minutes until it thickens slightly.
  • Turn off the heat. Add lemon juice and garnish with fresh coriander leaves.
  • Serve hot as a light, nourishing meal.
  • This detoxifying soup is ideal for those on a weight-loss diet, people with kidney stones, or urinary tract infections. It’s also an excellent energy-booster and immunity support drink for the sick and recovering.


  • Horse Gram Porridge (Kulthi Raab):

    Ingredients:
    Horse gram flour (Kulthi atta) ½ cup
    Jaggery ½ cup
    Water 3 cup
    Ghee 2 t.spoon
    Nutmeg powder ½ t.spoon
    Dry ginger powder (Sonth) ½ t.spoon
    Recipe:
  • In a heavy-bottomed or non-stick pan, heat ghee on medium flame.
  • Add horse gram flour and roast it until it turns light brown and gives a rich, nutty aroma.
  • In a separate pot, boil 3 cups of water.
  • Gradually pour the boiling water into the roasted flour mixture while stirring continuously to prevent lumps.
  • Add jaggery and mix well until fully dissolved.
  • Let the mixture simmer on low flame for 5-6 minutes until it thickens to a semi-liquid consistency.
  • Add nutmeg powder and dry ginger powder. Mix well.
  • Serve warm.
