How to Use Fox Nuts in the Kitchen

Wholesome Fox Nut Dessert (Phirni Style):
Ingredients: |
Fox nuts (makhana) |
1 cup |
Rock sugar or jaggery |
½ cup |
Cow milk |
2 cups |
Almond flakes |
2 t.spoon |
Cardamom powder |
½ t.spoon |
Recipe: |
In a heavy-bottomed pan, dry roast the fox nuts for 3-4 minutes until crisp. |
Let them cool, then grind them into a coarse powder using a mixer grinder. |
In another pan, heat the milk and add rock sugar or jaggery. Stir continuously on a medium flame for 5-7 minutes. |
Add the ground fox nuts, almond flakes, and cardamom powder. Mix well and cook for another 4-5 minutes until the mixture thickens slightly. |
Serve warm, at room temperature, or chilled; it tastes great in all forms. |

Energizing Fox Nut & Fig Smoothie:
Ingredients: |
Fox nuts (makhana) |
1 cup |
Basil seeds |
½ cup |
Coconut water or plain water |
1 glass |
Fig |
½ cup |
Almonds |
½ cup |
Cashew |
¼ cup |
Pistachio |
¼ cup |
Cardamom powder |
a pinch |
Recipe: |
Soak basil seeds and almonds overnight. |
Dry roast fox nuts, cashews, and pistachios in a pan. Once cooled, crush them into a coarse powder using a mortar and pestle. |
In a blender, add coconut water, soaked basil seeds, soaked almonds, and chopped figs. Blend until smooth. |
Strain the mixture if needed for a smoother texture. |
Add the cardamom powder and the coarse fox nut mixture to the blender. Blend again briefly for 1-2 quick rounds. |
Serve chilled or at room temperature; suitable for breakfast, lunch, or dinner. |

Crispy Baked Fox Nut Mathri:
Ingredients: |
Fox nuts (makhana) |
1 cup |
Sesame seeds |
¼ cup |
Whole wheat flour |
1 and ½ cup |
Salt |
as per taste |
Black pepper |
1 t.spoon |
Green chilli paste |
1 t.spoon |
Ginger paste |
1 t.spoon |
Sesame oil |
for baking or roasting |
Recipe: |
Dry roast the fox nuts in a pan until crisp. Set aside a few 3-4 for texture. Grind the rest into a coarse powder. |
In a mixing bowl, combine whole wheat flour, fox nut powder (both fine and coarse), salt, and 1 teaspoon of sesame oil. |
Add black pepper, green chilli paste, and ginger paste. Mix well with your fingers. |
Gradually add water and knead into a firm dough (not too soft). |
Pinch lemon-sized balls from the dough, and flatten them into round mathris. |
Grease lightly with sesame oil and bake in a preheated oven at 180°C for 10-15 minutes, flipping midway. |
Or roast on a hot griddle without cutting. Once cooked, you may slice them with a sharp knife or enjoy them whole. |
Serve warm or cool with chutney or a healthy dip. |
