How to Use Black Pepper in the Kitchen

  • Black pepper is an essential spice in Indian and global cuisines, enhancing both taste and aroma in various dishes.

  • Recipes:

    Black Pepper and Tomato Rasam:
    Ingredients:
    Black pepper 2 t.spoon
    Tomato (finely chopped) 2 cup
    Tamarind paste 2 t.spoon
    Shallots (sambhar onion) finely chopped 2 t.spoon
    Water 3-4 cups
    Mustard seeds ½ t.spoon
    Curry leaves 2 t.spoon
    Cumin seeds 1 t.spoon - for tempering, 1 t.spoon for rasam mixture
    Oil 1 t.spoon
    Turmeric ½ t.spoon
    Salt As per taste
    Coriander leaves (chopped) 2 t.spoon
    Recipe:
  • In a bowl, mix tamarind paste with 1 cup of water until well combined.
  • Transfer the mixture to a pot and add 3 cups of water, turmeric, chopped tomato, and salt.
  • Bring it to a boil and let it simmer for 7-8 minutes.
  • In a mixer jar, blend cumin seeds, 1 teaspoon of curry leaves, and peppercorns into a fine mixture.
  • Add this to the pot and cook for another 2-3 minutes.
  • For tempering, heat oil in a frying pan and add mustard seeds.
  • Once they start sputtering, add 1 teaspoon of curry leaves and sliced shallots.
  • Saute until the shallots turn golden brown, then pour the tempering into the pot.
  • Boil for another 10 minutes and serve hot with rice or as a soup.
  • This appetizing dish aids digestion and serves as a healthy alternative to soups with excessive sauces and salt.


  • Black Pepper-Oats Salad:
    Ingredients:
    Black pepper 2 t.spoon
    Cabbage (chopped) 1 cup
    Tomato (chopped) 1 cup
    Cottage cheese (crumbled) 2-3 t.spoon
    Oats (soaked) 1 cup
    Salt As per taste
    Olive oil/ sesame oil 2 t.spoon
    Capsicum (chopped) ½ cup
    Coriander leaves 2 t.spoon
    Lemon juice 2 t.spoon
    Carrot (chopped) ½ cup
    Sesame seeds 1 t.spoon
    Recipe:
  • Heat a pot over medium flame and add oil.
  • Add sesame seeds and chopped vegetables, saute for 1-2 minutes.
  • Stir in oats, salt, and black pepper, mixing well.
  • Finally, add crumbled cottage cheese and fresh coriander.
  • Remove from heat and transfer to a plate.
  • Serve hot.
  • This nutritious dish aids digestion, enhances nutrient absorption, and serves as a wholesome snack. It's an excellent choice for evening munching and supports a diet for obesity and diabetes management.


  • Black Pepper Kheer:
    Ingredients:
    Pepper powder 1½ t.spoon
    Brown rice 1 cup
    Milk 3-4 cups
    Jaggery 1 cup
    Water For rice boiling 4-5 cups
    Fox nut ½ cup
    Ghee 2 t.spoon
    Recipe:
  • Boil rice in a pot until fully cooked.
  • Strain the excess water and add milk to the boiled rice. Cook for a few minutes.
  • Stir in jaggery and black pepper powder, mixing well.
  • In a separate pan, heat ghee and roast fox nuts until they turn light brown.
  • Add the roasted fox nuts to the rice mixture and mix well.
  • Serve hot or cold.
  • This wholesome dish provides the combined benefits of milk and rice, aiding digestion and strengthening the body. It is especially beneficial for children dealing with indigestion and weakness.
