How to Use Bamboo Rice in the Kitchen
Bamboo rice is a variety of grass grains that is rich in fibre and low in carbohydrates compared to regular rice.
It serves as a healthier alternative to wheat and traditional rice, especially for individuals with diabetes or obesity.

Steamed Bamboo Rice Idli with Colocasia Wrap:
Ingredients: |
Bamboo rice (soaked) |
1 cup |
Black gram lentils |
½ cup |
Colocasia leaves |
as needed (for wrapping) |
Salt |
as per taste |
Lemon juice |
1 t.spoon |
Carrot |
1 (grated) |
Recipe: |
Soak bamboo rice and black gram lentils together for 7-8 hours. |
Grind them into a coarse paste using a little water to achieve a dripping consistency. |
Allow the batter to ferment for 3-4 hours. |
Grease an idli steamer plate and line it with colocasia leaves. |
Pour the fermented batter over the leaves and steam for 5-6 minutes, or until the idlis are fully cooked. |
Serve hot along with the colocasia leaves, drizzled with ghee or paired with green chutney. |

Bamboo Rice Sweet Crumble:
Ingredients: |
Bamboo rice |
1 cup |
Rock sugar powder |
1 cup |
Cardamom powder |
1 t.spoon |
Mixed dry fruit powder |
¼ cup |
Rose syrup |
1-2 t.spoon |
Ghee |
¾ cup |
Recipe: |
Dry roast bamboo rice in a heavy-bottomed pan for 3-4 minutes until aromatic. |
Allow it to cool completely, then grind it into a fine powder using a mixer grinder. |
In a large mixing bowl, combine the bamboo rice powder with rock sugar powder, cardamom powder, dry fruit powder, rose syrup, and ghee. |
Mix thoroughly using your hands for 10-15 minutes until the mixture holds together. |
Press the mixture tightly into small bowls or moulds to shape. |
This sweet crumble is rich in fibre and minerals and is ideal for children and adults. It also helps relieve constipation, making it especially beneficial for the elderly. |
Diabetic-Friendly Bamboo Rice Upma:
Ingredients: |
Bamboo rice |
1 cup |
Amaranthus leaves |
¼ cup |
Curry leaves |
¼ cup |
Mixed vegetables: (carrot, cauliflower, beans, cabbage, peas - chopped and boiled) |
1 cup |
Turmeric powder |
½ t.spoon |
Green chillies (chopped) |
2 t.spoon |
Salt |
as per taste |
Oil |
2 t.spoon |
Lime juice or kokum paste |
1 t.spoon |
Recipe: |
Pressure cook the bamboo rice with adequate water for 4-5 whistles until fully cooked. |
Heat oil in a frying pan. Add curry leaves and green chillies, and saute briefly. |
Add the boiled mixed vegetables and salt. Cook for 2 minutes. |
Stir in turmeric powder and chopped amaranthus leaves. |
Add the cooked bamboo rice to the pan and mix well with all ingredients. |
Cook for another 2-3 minutes. Finish with lime juice or kokum paste for a tangy twist. |
Serve hot. |
