Ingredients :

  • Small pieces of ripe pumpkin - 1 cup (150 gm).

  • Cowpeas/soybeans - 1/2 cup ( 25 gm).

  • Ragi flour - 30 gm.

  • Jaggery syrup - 15 gm.

  • Scraped coconut - 30 gm.

  • Ghee - 10 ml.

  • Total quantity - 4 to 5 pancakes.

  • How to prepare :

  • Soak cowpeas/soybeans for 4 hours and cook well in a pressure cooker.

  • Add pumpkin pieces and a glass of water and let it cook further.

  • Add ragi flour and boil for a few more minutes.

  • Keep stirring and add jaggery syrup, scraped coconut and ghee.

  • Now, make small pancakes with the cooked mixture.

  • Benefits :

  • Pumpkin has high vitamin A, E, C, iron and folate, which boosts the immune system.

  • One of the best sources of lutein and zeaxanthin helps to lower the risk of age-related cataract.

  • Dietary fibre and protein help to reduce bad cholesterol.

  • Contains various minerals like calcium, magnesium, zinc to improve bone density.

  • Note :

  • It is an excellent food for diabetics if salt is used in place of jaggery or sugar.
