Ingredients :
Cooked horse gram - 2 cups (60 gm).
Tamarind / lemon juice - 20 gm/1 spoon.
Tomatoes - 1 chopped.
Curry leaves - 5-6 (5 gm).
Garlic paste - 2 tea spoons.
Pepper-cumin seeds paste - 2 teaspoons.
Mustard seeds - 1 teaspoon.
Salt - to taste (1 teaspoon).
Cooking oil - to season (5 ml).
No.of Servings - 2-3 bowls (300-400 ml).
How to prepare :
Wash and soak horse gram for 4 hours and steam it.
Drain the substrate. Heat 1 teaspoon of oil/ghee in a pan add mustard seeds, curry leaves, red chillies and fry them for 10 seconds.
Add chopped tomatoes and cook until soft. Then add 2 teaspoons of garlic paste saute till raw smell goes off.
Now add tamarind, salt and bring it to boil. You can also add jaggery, black pepper, cumin seeds, lemon juice as per your interest.
Add horse gram, boil and then serve it hot.
Benefits :
High in iron, calcium, and provides 1/4th of total protein required in a day per serving.
Low in fat and high in fibre so it is diabetic-friendly food.
The raw seeds of horse gram has flavonoids and polyphenols that protects the liver and gall bladder.
